With a local chef, you will step into a familiar market, learn to identify fresh herbs, choose the right spices, and listen to the everyday stories behind each stall. Then, in an intimate cooking class, your hands will roll fresh spring rolls, fry crispy banh xeo, or cook aromatic pho – all under the careful guidance of a teacher who knows Vietnamese food culture well.
The class ends with a small feast you have prepared yourself. Sitting around the table, savoring hot dishes and listening to the chef share cooking secrets, you will take home not only recipes but also an unforgettable piece of Hanoi memory.
From Local Market to Hanoi Cooking Class
08:30 – Meet the chef/guide at the meeting point
You meet the chef or guide at the cooking class or a meeting point in central Hanoi / Old Quarter. The chef introduces the schedule, planned menu, and tips for the market visit.
09:00 – Go to the local market
Walk with the chef to the nearest local market. Here, you will learn to identify fresh herbs, choose the right spices, admire colorful seafood/meat/fruit stalls, and understand more about the buying culture, bargaining, and how Hanoi families prepare daily meals.
10:00 – Return to class, introduce dishes & cooking techniques
After selecting enough ingredients, the group returns to the cozy kitchen space. The chef introduces the seasonal menu, how to prepare ingredients, and basic techniques of Vietnamese cuisine such as rolling, frying, mixing dipping sauces, marinating, and presenting dishes attractively.
10:30 – Cooking practice
You prepare and cook about 4–5 signature Hanoi dishes with your own hands. The menu may change according to season and dietary requirements, for example: shrimp and pork spring rolls, crispy fried spring rolls, banh xeo with shrimp and bean sprouts, papaya salad, pho cuon, or refreshing fruit dessert.
12:00 – Enjoy the meal you cooked
The group sits together to enjoy the freshly cooked dishes. The chef shares more about the proper way to eat, how to mix the perfect dipping sauce, and simple variations so you can cook again at home.
13:00 – End of program
You receive the recipes, take souvenir photos with the chef, and conclude the culinary experience at a convenient meeting point in central Hanoi.
