Hoi An wears its history on every ochre-colored wall of its UNESCO-listed Ancient Town. A short bicycle ride through emerald rice paddies brings you to Tra Que Vegetable Village, where you can join a cooking class using herbs you've just picked. And no visit is complete without sampling cao lau — the legendary noodle dish found only in Hoi An.
